It is a wine that can be matched with many foods: shellfish, crudités, filled pastas, risottos, roast fish but also white meats.

Complex, Persistent, Linear
The most particular and complex Classic Method, bottled for refermentation for the first time in 2011 and inaugurated 5 years later for the anniversary of the twenty-fifth grape harvest in 2016. Fresh and vertical, a tribute to Ugo Botti, founder of Tenuta la Vigna.
Grapes: 100% Chardonnay.
Vinification: after a scrupulous qualitative selection of the bunches, the grapes in small crates are brought to the cellar for immediate pressing. The must obtained ferments in steel and wood, at a controlled temperature of 16 ° C and is aged on “noble lees” throughout the winter. In spring, the blending is carried out with the most acidic bases and a portion of old vintages, bottling and second fermentation; the bottles are then left lying down for a second refinement lasting at least 50 months, in contact with the yeasts. This is followed by the remuage operation on the pupitres, then the disgorgement without adding sugars in liqueur. Before being marketed, the wine is aged in the bottle, in an air-conditioned environment, for about 1 year.
Color: Straw yellow with golden reflections. The long ageing offers a bright golden shade of excellent intensity; it has numerous, fine, and persistent bubbles.
Aroma: the first impact on smelling it is ample and refined, it expresses from the very start generous and very open tones: lime blossom, bergamot, candied citrus, a slight toasting of salted dry fruit and chopped hazelnuts. Subsequently, liquorice root, chinotto orange and aniseed emerge with a saline finish.
Palate: a full, smooth, clean and direct wine, with great flavour and freshness; definitely transversal and full-flavoured, with excellent elegance and persistence.
Serving temperature: to be served at 6-9°C in a large stem glass to appreciate all its complexity.
